Cress stuffed apple salad

  • 4 Greenstar apples
  • 2 tablespoons lemon juice
  • 100 g Gouda cheese (semi-matured)
  • 1 packet of watercress
  • 1 packet of garden cress
  • 2 – 3 tablespoons vinegar
  • 1 teaspoon mild mustard
  • salt and pepper
  • 1 teaspoon sugar
  • 2 tablespoons olive oil
  • 100 g Parma ham (sliced)
  • freshly ground pepper to taste

Preparation

Start by washing the Greenstar apples. Cut a 1-cm slice off the top of each apple (the so-called “caps”). Then hollow out the apples by cutting slices of 1 cm thick from the inside.

Sprinkle the removed slices with lemon juice. Cut the cheese into thin strips, wash the cress and finely cut using a pair of scissors. Also dice the apple slices before mixing with the cheese, garden cress, watercress.

Prepare a dressing by mixing vinegar, 3 – 4 tablespoons of water, mustard, salt, pepper, sugar and oil. Drizzle over salad. Spoon salad into apple casings. Any leftover salad mix can be arranged around the apples.

Replace the “caps” and arrange slices of ham around the apples. Sprinkle with pepper to taste.
