Fresh apple-mint sorbet

  • 2 Greenstar apples
  • 4 kiwi fruit
  • 2 tablespoons honey
  • Juice of a half lemon
  • 3 bottles of chilled Hoegaarden white beer (30 cl)
  • 4 small sprigs of lemon balm or mint


Peel and remove core and cube the Greenstar apples. Peel and cube the kiwi fruit. Combine in a freezer container and place in the freezer for 2 hours.

Remove from the freezer and add lemon juice and honey. Briefly puree everything together in a blender. Return the container to the freezer.

Allow to freeze for 2 hours, stirring frequently with a fork. Scoop balls of sorbet into highball or parfait glasses.

Top with cold beer and garnish with a sprig of lemon balm or mint.
